Terms of utilising smoked salmon – I prefer the cold smoked salmon from Tasmania, of which there are a number of great brands,the flavour is a lot cleaner, with a lighter silken mouthfeel than European or Canadian methods – and so to with the roe! |

“At the restaurant we use hillside lamb from Australia which is such a superb product – with a sweet, long distinct flavour; great for marination as it can stand up to lots of complimenting flavours. I love this dish –easy to cook and even easier to eat, and sometimes that is all you need.The sauce takes Catalonian inspiration, the method an ancient one, and the flavours seem an unlikely pairing with the whole dish, however, it is a marriage made in heaven – don’t be scared when making it; to continue the analogy for it to succeed all that is required is a bit of patience, care and love, that’s all ! – in the end it’s a cracker of a combination.” |
